Gail Atkin's Microwave Peanut Brittle

(IMPORTANT NOTE: Microwave must be at least 1200 watts. Check inside microwave for information)

Ingredients:   

½ cup white corn syrup

1 cup white sugar

1 tablespoon real butter

1 teaspoon baking soda

1 cup dry (salted) roasted peanuts

1 tablespoon vanilla

Directions:

In a round microwave dish, combine syrup and sugar, stirring until well blended.

Microwave on high for 3 minutes.

Add nuts and microwave on high for another 3 minutes.

Stir in butter and vanilla, blending well. Microwave on high for 1 minute.

Add baking soda and stir until foamy. Pour onto a greased cookie sheet.

Cool and break into pieces. Peanut brittle can be put in plastic container or frozen.
