Ricotta Pancakes

Ingredients:
3 eggs
½ lb whole milk ricotta
½ cup flour
2/3 cup milk
2 T powdered sugar
1 tsp baking powder
1 tsp pure vanilla
pinch of salt
Maple sugar
Powdered sugar

Directions:
Separate eggs from yolk.  Beat egg yolks, sugar, salt, milk, baking powder and ricotta together.  Gradually add flour.  Whip egg whites to a peak and gently fold into egg mixture.  On griddle or frying pan, (butter the griddle then wipe off with paper towel) pour enough mixture to make a pancake one or two at a time.  Cook for one minute or until bubble for. Flip and cook until golden brown. Roll up like crepes and serve with hot maple syrup and butter.  Sprinkle lightly with powdered sugar. Serves 4.
